Love these Bento boxes for lunch. With a busy week ahead, Sunday night prep is da man. With the overnight oats boxed and fridged, it's on to my staple 3 bean chilli with veg protein. 30 diff types of veg per week is the goal for optimal gut health. In this dish we're talking mushies, courgette, peppers, celery, spring onion, garlic, chilli, ginger, tomatoes, turmeric, paprika, cumin, coriander, jackfruit, kidney beans, butter beans and chickpeas - a whopping 17 plant foods here. Paired with about 60g of brown rice, that's lunch sorted for the week and your gut bugs are happy out. Top with some tamari, sriracha, soya yoghurt, avo or fresh coriander👌💪🚀 Freezer food. It's a third of your fridge space. Are you maximising this storage space? There are so many quick meals you can pull together from stuff in your freezer and jars right now, the possibilities are endless. Just shoot for a good protein source, I'm keeping it meat free in this one, good complex carbs, poly and mono sat fats and micronutrients from a variety of veg. Get stuck in! Happy hour time! After a long hard week, I still love a beer (or stout). I look forward to the tsshh of the opening, the pour, that first taste hitting the back of your mouth and the lovely gentle release as your shoulders drop just a little and you relax into a different gear. It's been 3 years and 5 months since I last consumed alcohol and I can honestly say it is one of the biggest levers you have to build better health. The alcohol free (AF) options on the market today are amazing and make this decision much easier to sustain over the long term. All boats rise in your life when you stop pouring sludge into the body's machinery and with the AF options available today, you are gaining far more than you are giving up. Happy Halloween! 🤡 Deciding to run 26.2 miles continuously is an act of sheer madness to most people. This year, a record 25,000 tickets have been sold for the 1st in person Dublin City Marathon since 2019, which makes this the biggest Dublin Marathon yet. I have completed this marathon on three different occasions, so here are my top tips for making it through what could be one of the best/worst days of your life.
