Breakfast like a king, lunch like a prince and dinner like a pauper. It’s a funny old saying but the wisdom within remains as valid today. Break the fast like a king with this simple, wholesome bowl of nourishment.

Serves 3-4 | Takes 15 minutes
Ingredients
- 1 cup organic whole porridge oats
- 1 cup of soya, oat or almond milk
- 1 cup of water
- 1 kiwi, sliced
- 1 banana, sliced
- Handful of pumpkin seeds
- 2 tbsps soya yoghurt
- 2 tbsps toasted flaxseed
- 0.5 tsp ground cinnamon
- 1 tbsp maple syrup (optional)
Method
- Soak the oats in a pot with the water and milk overnight
- Soaking overnight helps to soften the oats and makes them easier to digest
- Heat to a medium heat and simmer for 15 minutes
- Add the flaxseed to a 180 degree oven for the same 15 minutes
- Once done, transfer one serving to a bowl
- Add all the toppings
- For extra sweetness, you could add a drizzle of maple syrup over the top too – decadence!
