Breakfast Bowls

Breakfast like a king, lunch like a prince and dinner like a pauper. It’s a funny old saying but the wisdom within remains as valid today. Break the fast like a king with this simple, wholesome bowl of nourishment.

Serves 3-4 | Takes 15 minutes

Ingredients

  • 1 cup organic whole porridge oats
  • 1 cup of soya, oat or almond milk
  • 1 cup of water
  • 1 kiwi, sliced
  • 1 banana, sliced
  • Handful of pumpkin seeds
  • 2 tbsps soya yoghurt
  • 2 tbsps toasted flaxseed
  • 0.5 tsp ground cinnamon
  • 1 tbsp maple syrup (optional)

Method

  1. Soak the oats in a pot with the water and milk overnight
  2. Soaking overnight helps to soften the oats and makes them easier to digest
  3. Heat to a medium heat and simmer for 15 minutes
  4. Add the flaxseed to a 180 degree oven for the same 15 minutes
  5. Once done, transfer one serving to a bowl
  6. Add all the toppings
  7. For extra sweetness, you could add a drizzle of maple syrup over the top too – decadence!
