Falafels are one of my goto favourite plant based foods. They are super simple to put together and I eat them alot with hummus or fry them in a little oil to make them even better in a pitta or a rye crisp bread sandwich.

What You Need
- Falafels
- Drizzle of Olive oil
- 1 onion, finely chopped
- 3 garlic cloves, crushed or chopped
- Spices
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp dried oregano
- 1/4 tsp ground ginger
- Handful of fresh coriander, chopped
- Zest of half of lemon & the juice
- 3 tbsp buckwheat flour (or any flour you have)
- Salt & pepper
- Tahini Dressing
- 1 tbsp tahini
- 5 tbsp water
- 1 crushed garlic clove
- Juice of 1/2 lemon
- Pinch of salt & pepper
- 1/2 tsp smoked paprika
How To Make ‘Em
- Get the oven pre heated to 180 degrees
- Fry off the onion, garlic and spices for 3-4 minutes, medium heat
- Once they become soft and translucent, add to a food processor with all the rest of the ingredients
- If the mixture is too crumbly, add more oil and flour and blend more
- Shape the mixture into mini balls with your hands
- Cook in the over for 15 minutes
Tahini Sauce
- Add everything to a bowl and whisk together until smooth.
